The market for PBSAs is still in its nascent stage, but it offers a variety of products that attempt to mimic the sensory characteristics of conventional seafood options while delivering environmental and health benefits. However, realizing these potential benefits hinges on consumers’ acceptance of these seafood alternatives.
Key findings:
The findings of our study provide fresh insights into how consumers value PBSAs over conventional seafood products and other potential substitutes such as meat and tofu. Our results can inform producers, policymakers, and marketers in the seafood industry to develop more targeted interventions and marketing strategies for respective groups and to understand the potential for PBSAs to gain wider consumer acceptance and the factors that influence that acceptance.
